Asparagus Goat Cheese Tart

As promised, we present to you more asparagus, though this creamy tart is so heavenly that it may just convince you that you’re eating something completely void of vegetables. Besides, it has been well-established that goat cheese is the soft cheese of champions, and budget or not, you probably need to work this product into your diet. So here’s your incentive to start enjoying spring, goat cheese, and asparagus.

Asparagus Goat Cheese Tart

Filling:

1 pound asparagus, washed and ends trimmed – $0.99
4 ounces goat cheese – $3.30
1/2 tsp salt – $0.01
4 large eggs – $0.60

Crust:

1.5 cups whole wheat flour – $0.30
1/4 cup vegetable oil – $0.12
1/2 cup cold water – free
1/2 tsp salt – $0.01

Directions:

For the dough:

  • Mix vegetable oil with flour and salt until mixture is crumbly. Slowly add water, just until dough holds its shape.
  • Cover and refrigerate for 30 minutes or until ready to use.
  • When ready to use, roll dough out to the shape of a pie pan.

For the filling:

  • Preheat oven to 400 degrees F.
  • Whisk eggs with goat cheese just until goat cheese and salt just until goat cheese is slightly chunky.
  • Assemble asparagus in prepared pie pan and top with the egg/goat cheese mixture.
  • Bake for 30-35 minutes, or until center of tart is set.
